Schubach Aviation has partnered with globally-inspired restaurant, Waverly, to offer an elevated in-flight menu by award-winning Chef Brian Redzikowski. The Cardiff-by-the-Sea restaurant, featured in Travel + Leisure and Architectural Digest, is part of the acclaimed SDCM restaurant group portfolio, a boundary-pushing Southern California hospitality collective recognized by Michelin Guide for its buzzy Kettner Exchange restaurant. Charter clients will now be able to enjoy a specially curated menu of Waverly-prepared shared appetizers, salads, mains, dessert, and specialty cocktails at 41,000 feet.
Lauded SDCM Executive Chef Brian Redzikowski is the creative mind behind Waverly’s celebrated menu. Known for his unique perspective on classic French techniques and Asian flavors, the native New Yorker has led a prolific career, cooking in high-profile kitchens (including under Joël Roubuchon and Nobu Matsuhisa) throughout the United States. Redzikowski has competed in Iron Chef America, cooked at the James Beard House in New York City, thrown down on Beating Bobby Flay, cooked at Outstanding in the Field dinners, and was crowned “king of pork” at the national Grand Cochon competition.
Redzikowski’s culinary approach at Waverly is best described as progressive American cuisine with European influences, and an emphasis on exceptional, peak-season sourcing from the finest purveyors across the country. The exclusive in-flight Waverly menu features some of his longtime favorite dishes, including:
Caesar Salad topped with “twinkie” croutons
Ocean Trout Ceviche l Girl & Dug tomatoes, onion, Beylik cucumber, radish, aji amarillo
Harissa Grilled Selva Shrimp l Rancho Gordo chickpea salad, mint, dill, Beylik cucumber, and onions
Grilled Aleppo Mary’s Chicken l herbs, spinach, and pickled red onion.
Specialty cocktails, including a signature “The Jetsetter” margarita, developed by Waverly’s all-star bar team led by Beverage Director Eric Johnson (an Eater San Dego “Best Bartender” alum), are served individually or in large format options which serve four to six guests.
