Experience Schubach Aviation’s exclusive in-flight menu, in partnership with globally-inspired restaurant Waverly. Award-winning Executive Chef Brian Redzikowski has curated a menu of shared appetizers, salads, and mains to be enjoyed at 41,000 feet, with his signature emphasis on exceptional, peak-season sourcing from the finest purveyors across the country.
Waverly, featured in Travel + Leisure and Architectural Digest, is located in picturesque Cardiff-by-the-Sea and is part of the acclaimed SDCM restaurant group portfolio, a boundary-pushing Southern California hospitality collective recognized by Michelin Guide for its buzzy Kettner Exchange restaurant.

Schubach Aviation is pleased to partner with award-winning Burtech Family Vineyard for our in-flight wine program. Situated on the San Diego coast in Encinitas, the 11-acre Burtech Familyestate and horse farm is planted with 3,500 vines of Pinot Noir, Chardonnay, Cabernet Sauvignonand Syrah – and is home to a competitive Hunter/Jumper and Dressage facility. In addition, thewinery sources grapes from acclaimed Sonoma Vineyards, including Sangiacomo, AnnadelVineyard, and historic AVA’s such as Sonoma Valley and Moon Mountain. In just two years ofoperations, Burtech wines have garnered more than 14 90+ scores from Wine Enthusiast.
